Pan Fried Meat, Shaiyah

Pan fried lamb, Shaiyah. Succulent cubes of lamb boiled with garlic, onions and herbs, then pan fried with spices.

Pan Fried Meat, Shaiyah

This is a delicious dish of pan fried meat called Shaiyah. I chose to use lamb for this recipe. In fact, Shaiyah can be made with beef, lamb or goat meat. Shaiyah is a special occasion food, cooked when the family has slaughtered an animal for a celebration. Part of the meat is reserved to make Shaiyah, and this meat includes bony pieces and fatty pieces, the more to add aroma and flavor.   The meat is boiled with little water in a covered pan with onions, garlic and herbs. After it has cooked half-way, a small amount of oil is added, and the meat is fried in the pan with frequent stirring to get caramelization, that is, even browning of all sides. This cooking method renders succulent tender pieces of mouth watering pan fried meat.

South Sudan Cuisine

South Sudan Cuisine is heavily influenced by East African and Arab cuisine. At the basic level meals are meat or fish stews with a vegetarian side dish eaten with Asida, a thick porridge made from sorghum or millet. Unique to South Sudan cuisine is the use of peanut butter to thicken sauces. South Sudanese cuisine is generally complex and labor and time consuming. Women spend the better part of the day cooking the day's meals. Sweet hot tea is consumed at any time of the day, for breakfast, after a meal in the afternoon, offered to guests and at every occasion.

How well do you know your green plants? This plant How well do you know your green plants? This plant which we call pondu. Fun facts: cassava has a poison called cyanide so it must be cooked for an extremely long time such as 3 hours. The leaves are cooked into a meal called pondu, usually with dried fish and palm oil. Pondu is a specialty of the Western Equatoria Azande tribes.

South Sudan like many indigenous populations is blessed with a wide variety of agricultural plants at the disposal of the local communities. Did you know that in many Western populations the breadth and variety of produce are reduced to a handful? Basically, those not considered popular or commercially viable are eliminated from rotation, and given that the locals are removed from their land, only having access to produce through a grocery store; a large section of plants are lost forever. As we know many plants have medicinal uses, and some in our traditional areas have not been discovered yet! They contain micro-nutrients and powerful anti-oxidants that protects against aging and cancer.
