Tegiri is a dark bitter leafy green vegetable native to South Sudan and cultivated for eating. Please refer to the image below to view the plant. It is inherently bitter. South Sudanese cook tegiri in two methods. One way utilizes peanut butter and the other method involves chitlins or chitterlings (beef intestines). Today I present a recipe for cooking Tegiri with peanut butter. It is a simple recipe. In fact, there are only three ingredients. This meal is best is best eaten with Asida, or with white sweet potatoes, which balances out the bitterness.
