Sukuma Wiki, Kale recipe
Sukuma wiki is a Swahili word that means move the week along, in other words this meal carries you through the week onto the weekend when most families can afford to eat a meat dish. The most common greens used to make this meal are kale greens, collard greens, or a combination. These dark leafy vegetables are not indigenous to South Sudan. Population growth and migration of cultures led to South Sudanese adopting this dish from neighboring Kenya and Uganda. The basic sukuma wiki, kale recipe calls for washed and sliced kale or collards cooked in fried onions and tomatoes. One may add meat, crawfish, dried fish, beef stock bullion, green pepper, or other ingredients to increase its nutritional value and “push the week along”.
