Sudanese Kahk – Sugar Coated Cookies

‘Tis the season for Bakin’! Christmas is right around the corner. In Sudan and South Sudan that means it is time for baking home-made cookies and biscuits. All families indulge in this rite, and cookies are shared with friends, neighbors and guests. I will share a recipe for Sudanese Kahk- sugar coated cookies. These cookies are crumbly, flaky, not too sweet, and lightly dusted with icing sugar. They are the all time favorite. Sudanese Kahk – sugar coated cookies, are made with ghee or clarified butter. Ghee does not need refrigeration and therefore well suited for the hot South Sudan weather, where most families lack refrigerators. We will use plain yoghurt, a little bit of sugar, flour, and flavorings. Roasted sesame seeds give it an extra crunch.  To find out how to make these all time holiday favorite, read the recipe below. INGREDIENTS

Ingredients for Sudanese Kahk – Sugar Coated Cookies

  • 8 cups Flour, sifted
  • 3 cups ghee, melted
  • 1 cup plain yoghurt
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 2 tablespoon sesame seeds, roast in oven for 10min
  • 1/2 teaspoon Salt
  • Icing sugar
  • Flavours: vanilla 1 tablespoon
  • Optional : Anise 1 tablespoon,Ground Cardamon: 1 teaspoon
  • Additional optional flavorings for Kahk: fennel, ground cloves, mahlab,

BAKING METHOD

  1.  Warm ghee. Place in mixing bowl.
  2.  Add yoghurt. Mix using hand mixer or electronic food mixer.
  3. Add vanilla and anise.
  4. Mix dry ingredients: sugar, flour, sesame seeds, baking powder, salt, cardamon.
  5. Add dry ingredients to liquid ingredients. Mix well.
  6. Cover dough and let sit for 30min.
  7. Roll dough using wooden roller on flat surface. Use cookie cutters to make cookie shapes, and also use a small glass cup to cut the traditional circular shapes, and half moons that Sudanese love.

  8. Bake in oven set at 350 degrees Fahrenheit for 15 minutes, until cookies bottom edge start to turn a tan color.
  9. Remove from oven. Place on cooling racks.
