Tamiya, Falafel, Sudanese recipe

Today I present the Sudanese way of making Tamiya. This is a healthy nutritious vegetarian snack consumed throughout the Mediterranean countries. It is called falafel in the middle east and north Africa. Eat Tamiya alone, add to salad, or to a sandwich with feta cheese, lettuce and tomatoes. It is a popular street food and breakfast item. The Sudanese make Tamiya using using ground chick peas, which are formed into patties and deep fried. Other recipes may use ground fava beans, red lentils, or black eyed peas.

How to make Tamiya or Falafel, the Sudanese recipe

Soak 2.75 cups of chick peas in water overnight. Drain water. Chop 1 white onion, 1/3 cup of garlic and 1/4 oz of fresh dill or more.Blend the mix in a food grinder to a uniform coarse consistency. Add 1 teaspoon of baking powder, 3 teaspoon salt, 1/2 cup of water, 1 teaspoon black pepper, 1/4 teaspoon red chilli, and 1.5 tablespoon of flour and mix thoroughly.

Next fry the Tamiya. You need a deep heavy duty frying pan or a fryer. Pour oil onto pan and heat oil. Make 2 inch wide patties using your hand and fingers, and fry in the oil. Tamiya must be deep fried at medium heat. Make sure the oil is enough so it does not stick and burn the bottom, and the heat is not too much or the inside will be undercooked. Turn each Tamiya once to cook the other side until it is a uniform golden color.
