Sudanese Kahk - Sugar Coated Cookies

'Tis the season for Bakin'! Christmas is right around the corner. In Sudan and South Sudan that means it is time for baking home-made cookies and biscuits. All families indulge in this rite, and cookies are shared with friends, neighbors and guests. I will share a recipe for Sudanese Kahk- sugar coated cookies. These cookies are crumbly, flaky, not too sweet, and lightly dusted with icing sugar. They are the all time favorite.

Sudanese Kahk - Sugar Coated Cookies

Sudanese Kahk - sugar coated cookies, are made with ghee or clarified butter. Ghee does not need refrigeration and therefore well suited for the hot South Sudan weather, where most families lack refrigerators. We will use plain yoghurt, a little bit of sugar, flour, and flavorings. Roasted sesame seeds give it an extra crunch.  To find out how to make these all time holiday favorite, read the recipe below. Sudanese Kahk - Sugar Coated Cookies, Ingredients. Christmas Cookies, Kahk el eid, Eid Cookies, Middle Eastern Dessert. Taste of South Sudan.
Ingredients for Sudanese Kahk - Sugar Coated Cookies

INGREDIENTS

8 cups Flour, sifted

3 cups ghee, melted

1 cup plain yoghurt

1 tablespoon sugar

1 tablespoon baking powder

2 tablespoon sesame seeds, roast in oven for 10min

½ teaspoon Salt

Icing sugar

Flavours: vanilla 1 tablespoon

Optional : Anise 1 tablespoon,Ground Cardamon: 1 teaspoon

Additional optional flavorings for Kahk: fennel, ground cloves, mahlab,

Sudanese Kahk - Sugar Coated Cookies, ready to bake

BAKING METHOD

1. Warm ghee. Place in mixing bowl.

2. Add yoghurt. Mix using hand mixer or electronic food mixer.

3. Add vanilla and anise.

4. Mix dry ingredients: sugar, flour, sesame seeds, baking powder, salt, cardamon.

5. Add dry ingredients to liquid ingredients. Mix well.

6. Cover dough and let sit for 30min.

7. Roll dough using wooden roller on flat surface. Use cookie cutters to make cookie shapes, and also use a small glass cup to cut the traditional circular shapes, and half moons that Sudanese love.

8. Bake in oven set at 350 degrees Fahrenheit for 15 minutes, until cookies bottom edge start to turn a tan color.

9. Remove from oven. Place on cooling racks.

10. After it has sufficiently cooled: dust icing sugar all over.

ENJOY.

South Sudan Cuisine

South Sudan Cuisine is heavily influenced by East African and Arab cuisine. At the basic level meals are meat or fish stews with a vegetarian side dish eaten with Asida, a thick porridge made from sorghum or millet. Unique to South Sudan cuisine is the use of peanut butter to thicken sauces. South Sudanese cuisine is generally complex and labor and time consuming. Women spend the better part of the day cooking the day's meals. Sweet hot tea is consumed at any time of the day, for breakfast, after a meal in the afternoon, offered to guests and at every occasion.

How well do you know your green plants? This plant How well do you know your green plants? This plant which we call pondu. Fun facts: cassava has a poison called cyanide so it must be cooked for an extremely long time such as 3 hours. The leaves are cooked into a meal called pondu, usually with dried fish and palm oil. Pondu is a specialty of the Western Equatoria Azande tribes.

South Sudan like many indigenous populations is blessed with a wide variety of agricultural plants at the disposal of the local communities. Did you know that in many Western populations the breadth and variety of produce are reduced to a handful? Basically, those not considered popular or commercially viable are eliminated from rotation, and given that the locals are removed from their land, only having access to produce through a grocery store; a large section of plants are lost forever. As we know many plants have medicinal uses, and some in our traditional areas have not been discovered yet! They contain micro-nutrients and powerful anti-oxidants that protects against aging and cancer.
