Chopped liver stew or Kebda is considered a delicacy in South Sudan. It is most eaten during occasions such as Christmas, or marriage celebrations, when a lamb or goat or cow has been slaughtered for food. The inner organs; the liver, the heart, the kidneys and the spleen are often cooked together in a delicious stew with onions and tomatoes. Kebda is highly nutritious packed with tons of calories and protein. It is high in iron, various minerals and multivitamins, especially Vitamin A; while low in fat and fiber content.
